做(zuò )法:春笋(sǔn )切成片(piàn )后加少许盐(yán )捞出(chū )后(hòu )用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖焖。
