做法:春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
