做法(fǎ ):春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
